On the Second Day of Thanksgiving, your coach is gifting you: My Favorite Comfort Food Recipes!
One of my coaching focuses is, What are you consuming? What words, images, people make up the majority of your ‘diet’? The recipes below are all about Love. Barbara Ann and Abel are my parents. I hope you consume them in the company of those who are special to you!

Barbara Ann’s Spaghetti
1lb ground beef or turkey (I use spaghetti squash sometimes too instead of meat)
1 med onion, diced
1 med bell pepper, diced
Pasta (I use whole wheat or vegetable)
2 4oz cans tomato sauce, unsalted
2 16oz cans seasoned diced tomatoes (I use the basil, oregano), unsalted
1 jar sliced mushrooms (if you like mushrooms)
Salt, pepper, garlic powder, red pepper (to taste)
In a large pot, prepare pasta according to pkg directions (when done, I drain and return to pot with a little oil on low heat whole preparing the sauce)…
In a large skillet on med heat, sauté the ground meat with the diced onion & bell pepper until meat is crumbled and done. If using turkey, add a tablespoon of oil. If meat is frozen, I continuously flip and scrape the meat as the heat defrosts it. Drain the oil off in a colander and return to skillet.
Add tomato cans, seasonings, and mushrooms. Bring to boil then reduce to simmer. Cook on low about 10-15 minutes, tasting and adding more seasoning if needed.
Here’s the vegetable pasta I like (found at whole foods)
Chicken Noodle Soup
Shredded carrots(I get a pkg from produce)
1 large onion diced
1 diced bell pepper
4-5 32 oz cartons chicken broth (I use a good low-sodium brand)
One pkg wide egg noodles(I use whole grain if store has them)
1 rotisserie chicken, shredded to preference and keep the bones (I use Whole Foods, but any are fine)
Spices: Salt, pepper, garlic, basil
– In a big pot, med. heat a tablespoon of oil (I use almond or olive oil) and sauté the vegetables until softened(about 5 min), you can sauté in separate pan and add if you prefer.
– Add chicken broth and bring to boil.
– Add noodles. Cook about 5 minutes or until softened.
– Add shredded chicken and bones.
– Reduce heat to med low.
– Add seasonings to taste.
– Simmer about 10 more minutes.
– Add water to desired broth level, if needed.
This makes a lot, so you can freeze, share, or cut recipe in half.
Abel’s Chili
I lb ground beef or turkey
1 diced onion
1 diced bell pepper
3 cans Bush’s Best chili beans
1 jar sliced mushrooms
2 tblsp chili powder
1 tblsp garlic powder
Salt to taste
Red pepper to taste
Sauté meat(add a little oil if using ground turkey), onion, and bell pepper until brown in a large skillet. Drain and add to rest of ingredients in a large pot. Bring to boil, reduce to simmer until done.
